Kale is packed with essential nutrients such as vitamins A, C, and K, as well as minerals like calcium and manganese. It is fabulous in a variety of dishes, but our family favourite is Christine's Everything Salad that includes a variety of seeds and nuts, cheese, fresh and dried fruit. Plus a Balsamic Maple Dressing to top it off!
1 cup corn oil
½ cup balsamic vinegar
2 tablespoons prepared stone ground mustard
2 tablespoons pure maple syrup (dark)
½ teaspoon salt
½ teaspoon black pepper
Whisk all of the ingredients for the dressing in a small bowl, cover with plastic wrap, and set aside. Refrigerate until needed.
